Pumpkin Chocolate Chip Muffins

Perfect fall treat, great for school lunches or quick breakfast. These muffins gets lots of fibre from whole wheat flour, oat bran and pumpkin puree. The chocolate chips help to make them a bit more kid friendly or try raisins instead for a flavour variation.

 Makes 12

Ingredients

1 1/2 cups     Whole wheat flour    

1/4 cup         Oat bran

1/3 cup        Brown sugar 

1 tbsp           Baking powder

1 tsp             Cinnamon

1/4 tsp         Salt

1/4 cup        Mini chocolate chips

 

1/3 cup       Oil (canola or coconut, melted)

1/2 cup       Milk (dairy or alternative) 

1 cup          Pumpkin puree (pure canned pumpkin)

2 large       Eggs

2 tsp          Vanilla

 

Instructions

  1. Preheat oven to 350F, prepare with muffin cups with paper or nonstick spray.
  2. In a large bowl, whisk together flour, oat bran, sugar, baking powder, cinnamon, salt, and chocolate chips.
  3. In a small bowl combine oil, milk, pumpkin, eggs and vanilla. 
  4. Add wet ingredients to dry and mix until just combined.
  5. Divide batter evenly amongst muffin cups.
  6. Bake 20 min or until toothpick inserted into centre of muffin comes out clean. 
  7. Cool for 5 minutes.
  8. Enjoy.

Tips: 

  • Try substituting raisins for chocolate chips.
