Breakfast Apple Crisp
Apple Season Is Here
Apple season is one of our family's favourite time of year. Since moving to Ottawa, Ontario, Canada we have gone apple picking. Every year the girls look forward to the Sunday morning when we get to have a wagon ride the apple orchard, pick their own apples, maybe take a photo or two (I’ll be honest it’s likely more like 50, but who’s counting). The event always ends with our local orchard’s apple cider donuts, delicious! Once we get home I make a big batch of apple sauce that I freeze in individual portions that my youngest will eat as is or I use in recipes, like my favourite muffin recipes (I’ll publish that at a later time). The other thing I love to make is apple crisp. Oh apple crisp… I love the combination of oats, apples and cinnamon. This version is an excellent version for breakfast but you could easily add some ice cream and make it into a delicious fall dessert. My favourite way to serve up this breakfast version of apple crisp is warm with few scoops of plain greek yogurt topped with a drizzle of maple syrup and a dash of cinnamon. The best part of this recipe is its freezable!!! So go ahead a make several individual portions and freeze them for a perfect instant breakfast in a pinch.
Breakfast Apple Crisp
Ingredients
6 Medium apples, chopped into bite sized pieces
2 tbsp Flour
3 tbsp Maple syrup
1 tsp Cinnamon
1/4 cup Whole wheat flour
1 cup Old Fashioned oats (not instant)
1 tsp Cinnamon
1/8 tsp Salt
1 tsp Vanilla extract
2 tbsp Brown sugar
1/3 cup Walnuts
1/4 cup Hemp hearts
4 tbsp Coconut oil, melted
Instructions
- Preheat oven to 450F
- Combine the first 4 ingredients in a medium mixing bowl
- Divide apple mixture amongst 6 oven safe individual baking dishes (or one 9x9 dish)
- Combine remaining ingredients in medium mixing bowl*
- Place in oven and bake for 18-22 minutes
- Let cool and place in fridge for up to 3 days or freeze for 1-2 month
- When ready to serve, heat in microwave and eat as is or top with plain greek yogurt, cinnamon and maple syrup
*Tip:
I use the same mixing bowl for both the apple mixture and the topping mixture (less dish washing)
