Maple Coconut Granola

Maple Coconut Granola

This granola is perfect for breakfast with some plain greek yogurt or a great on the go snack

 

Ingredients

 

2 1/2 cups    Oats (Old Fashioned - not quick oats)

1/2 cup    Whole wheat flour

1/4 cup    Hemp hearts*

1/4 cup    Unsweetened coconut

1/4 cup    Pecans, chopped

Pinch        salt

1 tsp        Cinnamon

1/3 cup    Maple Syrup

1/4 cup    Coconut oil, melted (or canola oil)

1 tsp        Vanilla

 

Instructions

 

  1. Preheat oven to 300F, prepare a large baking sheet with foil or parchment paper.

  2. In a large bowl, combine oats, flour, hemp hearts, coconut, pecans, salt and cinnamon.

  3. In a medium bowl, combine maple syrup, oil and vanilla.

  4. Add liquid ingredients to oat mixture and stir until well combined.

  5. Spread mixture on prepared baking sheet

  6. Bake 20 minutes, stir

  7. Bake additional 20 minutes.

  8. Once cool, store in airtight container in fridge or freezer

 

 

* Tip: Can also use chia seeds or ground flax instead of hemp hearts (or a combination of some or all of them). They all add some fibre and healthy fats.
