Pickled Red Onions
I’ve been obsessed with these for the last several months. They taste amazing with eggs at breakfast or on tacos. Now thats its BBQ season, they are a great addition to burgers or smokies. Really they are good on almost anything savoury.
Ingredients
1/2 cup Warm water
1 tsp Sugar, white
2 tbsp Salt, sea salt or kosher salt
1/2 cup Red wine vinegar
1 Red onion, small, thinly sliced
Instructions
- In a 2 cup glass jar mix water, sugar and salt. Mix until sugar and salt fully dissolves
- Add vinegar and mix well
- Add red onion and gently mix, making sure all the onion is fully covered by liquid.
- Refrigerate for a minimum 30 minutes, but best if left over night
- Store in fridge up to 1 week.
