Pickled Red Onions

I’ve been obsessed with these for the last several months. They taste amazing with eggs at breakfast or on tacos. Now thats its BBQ season, they are a great addition to burgers or smokies. Really they are good on almost anything savoury.

Ingredients

1/2 cup    Warm water

1 tsp         Sugar, white

2 tbsp      Salt, sea salt or kosher salt

1/2 cup    Red wine vinegar

1               Red onion, small, thinly sliced    

 

Instructions

  1. In a 2 cup glass jar mix water, sugar and salt. Mix until sugar and salt fully dissolves
  2. Add vinegar and mix well
  3. Add red onion and gently mix, making sure all the onion is fully covered by liquid.
  4. Refrigerate for a minimum 30 minutes, but best if left over night
  5. Store in fridge up to 1 week.
