Easy Marinara Tomato Pasta Sauce

Homemade pasta sauce is super simple to make and comes together quickly. I make a batch and then freeze the extras for future meals. This recipe also works as pizza sauce. Best part… use whatever vegetables you’ve got. This recipe is a basic one, but you could add in peppers, mushrooms, zucchini, or if you’ve got an intolerance to something like onions or garlic, just take those out! This is the type of recipe where you only need a guideline, figure out how you like it best and make it that way. Have fun with it and don’t be intimidated.

Ingredients

1 tbsp                   Olive oil

1 large                  Onion, chopped    

3 cloves                Garlic, chopped

4 stalks                Celery, chopped

3 medium            Carrot, chopped

3 cans (28floz)    Tomato (whole or diced)

2 tsp                     Basil, dried

2 tsp                     Oregano, dried

To taste                Salt and pepper

1 can                     Tomato paste (optional) 

Instructions

  1. Pre-heat a large pot on medium-high.
  2. Add oil, onion, garlic, celery and carrots and cook until softened (3-5 minutes).
  3. Add tomatoes, and spices and simmer for 10 minutes.
  4. Blend with an immersion blender for a smooth consistency (optional).
  5. Add tomato paste and stir well (optional).
  6. Enjoy!

Tips: 

  • Simmer longer for more intense flavours
  • For a flavour boost - try adding some red wine or balsamic vinegar
  • Blend just a little or blend a lot! This can give you different taste/textures depending on your preferences.
  • Adding tomato paste gives it a thicker consistency, which my family prefer.
  • Freezes very well. 
  • I freeze extra in mason jars for pre-portioned dinner sizes
