Italian Pantry Salad

Keeping fresh salad ingredients in the house can be challenge, especially during these long winter months here in Ottawa, Ontario, Canada. Maybe after a vacation or time away from home the fridge is looking a bit empty, this salad can be quickly whipped up quickly with all ingredients found in your pantry.

Ingredients

3 tbsp White wine vinegar

1 tbsp Olive oil

1/2 tsp Onion, dried minced

1/2 tsp Garlic powder

1/2 cup Marinated artichoke hearts, chopped

1/4 cup Sundried tomatoes in oil, chopped

1/2 cup Roasted red pepper, chopped

1/4 cup Red onion, thinly sliced and chopped (optional)

1 can Chickpeas, drained and well rinsed

To taste Salt and pepper

Instructions

  1. Add all ingredients to a medium bowl and toss well. 

  2. Refrigerate until serving.

  3. Store in the fridge for up to 1 week.
