Steel Cut Oats
Steel cut oats are a perfect warm breakfast for cold fall mornings. Steel cut oats have a different texture than regular old fashioned oats and provide an extra boost of fibre and nutrients. This recipe toasts the oats before the cooking process, bringing out their natural nuttiness and delightfully different texture.
Serves 2-4 (depending on portion sizes)
Ingredients
1 tbsp Coconut oil
1 cup Quick cooking steel cut oats
1 cup Water
1 cup Milk (dairy or alternative )
2 tbsp Chia seeds/hemp hearts
1 tsp Vanilla extract
Your favourite toppings: maple syrup, cinnamon, shredded coconut, raisins, nuts
Instructions
- Melt coconut oil in medium pot over medium-high heat
- Add steel cut oats and toast them until the become fragment (watch them carefully because they can burn)
- Add water and reduce temperature to low-medium heat. Cook for 5 minutes, stirring a few times.
- Add milk, stir and increase temperature to medium heat, once bubbling reduce temp to low and cook 5 minutes.
- Add Chia seeds and vanilla and stir
- Portion and add your favourite oatmeal toppings
- Enjoy
Tips:
- Recipe can be doubled or even tripled
- Once cooled portions can be frozen in ziplock or small containers (makes for easy breakfasts)
