Cranberry Apple Breakfast Crisp

A perfect warm breakfast that feels like dessert. I’ve altered it to include more whole grains and healthy fibre to give you a nutrition boost to start the day!

Ingredients

3              Medium apples, skin on chopped into bite sized pieces(~3 cups)  

1 cup        Fresh Cranberries (frozen would likely work well)

2 tbsp     Whole wheat flour

3 tbsp     Honey

1 tsp        Cinnamon 

 

1/4 cup     Whole wheat flour

1 cup        Old Fashioned oats (not instant)

1 tsp         Cinnamon 

1/4 tsp     Nutmeg

Pinch        Salt

1 tsp         Vanilla extract 

2 tbsp    Brown sugar

1/3 cup     Pecans

1/4 cup     Hemp hearts

4 tbsp    Butter, melted

Instructions

  1. Preheat oven to 425F.

  2. Combine the first 5 ingredients in a medium mixing bowl.

  3. Divide apple mixture amongst 6 oven safe individual baking dishes (or one 9x9 dish).

  4. Combine remaining ingredients in medium mixing bowl*.

  5. Place in oven and bake for 18-22 minutes.

  6. Let cool and place in fridge for up to 3 days or freeze for 1-2 month

  7. When ready to serve, heat in microwave and eat as is or top with plain greek yogurt, cinnamon.

*Tip: I use the same mixing bowl for both the apple mixture and the topping mixture (less dish washing)
