Protein Packed Oatmeal

This is a twist on traditional oatmeal. Its full of protein and has a custard texture. Creamy and delicious plus packed with nutrients! Plus you can make a double batch and freeze for easy  breakfasts.

Ingredients

4 Eggs

2 1/2 cups Milk, 2%*

1 1/4 cups Oats, large flaked

1 tsp Vanilla

1/8 tsp Salt

1 tbsp Chia seeds**


Favourite toppings

Blueberry, pecan and maple syrup

Peanut butter, sliced strawberries and jam

Banana, walnuts, and brown sugar

Shredded coconut, sliced almonds and honey

Thinly sliced apples, cinnamon, almond butter


Instructions

  1. Whisk eggs, milk and oats in a medium saucepan over medium heat.

  2. Cook, stirring occasionally until very creamy for 15-20 minutes.

  3. Remove from heat and stir in vanilla, salt and chia seeds.

  4. Divide into 4 servings and top with your favourite toppings.


Tips: 

  • *You can use whatever milk you prefer, even water (although it won’t be a creamy).

  • **Can also substitute chai for ground flax or hemp hearts.

  • Freezes very well.
