Peach and Almond Breakfast Bars

Breakfast bars are perfect for on the go. They are packed with fibre and iron, plus they taste delicious!. I like to serve them warmed, topped with greek yogurt and maple syrup.

Ingredients

Crust

1 tbsp       Flax, ground

1/2 cup     Almond, smashed*

1 cup         Oats, old fashioned

1/2 cup      Whole wheat flour

1/4 cup      Honey

1/3 cup      Butter/Coconut oil, melted

1 tsp           Vanilla

 

Filling

2 cups       Peaches, small chopped (approximately 3)

1/2 tsp       Cinnamon

2 tsp          Cornstarch    

 

Instructions

  1. Preheat oven to 375 degrees F, and prepare a 8x8 baking dish with parchment paper (leaving a bit of overhang to easily remove bars from pan to cool and cut).
  2. In a medium bowl mix crust ingredients together and set aside 1/2 cup.
  3. Press remaining prepared crust into prepared pan.
  4. In the same bowl mix filling ingredients together and evenly distribute over crust.
  5. Top with 1/2 cup of crust ingredients (that were set aside)./
  6. Baking for 35 min.
  7. Once cooled, remove bars from pan and cut into 9 squares.

Notes/Tips: 

  • * Can use almonds crushed or pieces, or put whole almonds into plastic bag and smash a few times with a heavy pot or rolling pin.
  • Freezes very well.
