Gingerbread Granola

I think its no secret I’m a granola-aholic. I just love the stuff. But winter seems more like an oatmeal time than a granola time… until now! This granola has the Christmas season written all over it. The warmth of the spices makes it a perfect winter breakfast.

Ingredients

2 1/2 cup    Oats (old fashioned)

1/2 cup       Whole wheat flour

1/4 cup       Chia seeds

1 cup           Pumpkin seeds

2 tbsp         Cinnamon

2 tsp           Ginger, dried

Pinch          Nutmeg

Pinch          Cloves

Pinch          Salt

 

1/4 cup    Coconut oil, melted

1/4 cup    Maple Syrup

2 tbsp     Molasses

2 tsp        Vanilla

 

Instructions

  1. Preheat oven to 300F.
  2. Prepare a large baking sheet with parchment paper
  3. In a large bowl, mix together oats, flour, chia, pumpkin seeds, spices and salt.
  4. In a small bowl mix coconut oil, maple syrup, molasses and vanilla.
  5. Pour liquids into oat mixture and blend until well combined.
  6. Evenly distribute on prepared baking sheet
  7. Bake for 20 minutes, stir
  8. Bake an additional 10 minutes.
  9. Cool and store in airtight container for up to a week.

 

Tips: *This recipe can easily be doubled     *Refrigerate or freeze after 1 week
