Gingerbread Granola
I think its no secret I’m a granola-aholic. I just love the stuff. But winter seems more like an oatmeal time than a granola time… until now! This granola has the Christmas season written all over it. The warmth of the spices makes it a perfect winter breakfast.
Ingredients
2 1/2 cup Oats (old fashioned)
1/2 cup Whole wheat flour
1/4 cup Chia seeds
1 cup Pumpkin seeds
2 tbsp Cinnamon
2 tsp Ginger, dried
Pinch Nutmeg
Pinch Cloves
Pinch Salt
1/4 cup Coconut oil, melted
1/4 cup Maple Syrup
2 tbsp Molasses
2 tsp Vanilla
Instructions
- Preheat oven to 300F.
- Prepare a large baking sheet with parchment paper
- In a large bowl, mix together oats, flour, chia, pumpkin seeds, spices and salt.
- In a small bowl mix coconut oil, maple syrup, molasses and vanilla.
- Pour liquids into oat mixture and blend until well combined.
- Evenly distribute on prepared baking sheet
- Bake for 20 minutes, stir
- Bake an additional 10 minutes.
- Cool and store in airtight container for up to a week.
Tips: *This recipe can easily be doubled *Refrigerate or freeze after 1 week
