Protein Pancakes
Pancakes make a regular appearance on Sunday mornings at our house. These are a great option for a nutritional twist on the traditional pancake. I love them because they keep me full much longer than traditional pancakes. They’ve got no protein powders or hard to find ingredients, plus they can easily be made gluten free (if you use certified gluten free oats). I love to top mine with raspberries and nut butter, mmmmm melty goodness!
Makes 4-6 pancakes
Ingredients
1 Banana, peeled
2 Eggs (or egg whites from 3 eggs)*
1/4 cup Oats, Old Fashioned
1/4 tsp Baking powder
1/4 tsp Vanilla
dash Cinnamon
Instructions
- Pre-heat a nonstick pan over medium heat.
- Add all ingredients to blender and blend well.
- Pour batter onto pan in desired size.
- Flip, once bubbles have formed (or when browned).
- Cook other side until golden brown.
- Enjoy!
Tips:
- Freezes well.
- Recipe can easily be doubled.
- Whole eggs or egg whites both work well. Even liquid egg whites (6 tbsp).
